Summer 2021 is just around the corner!  I cannot believe it!  I want to share with you a Vietnamese recipe that is perfect for Summer.  What’s more Summer perfect than grilled meat!  In the past few weeks, my family had been eating endless grilled pork as I tried to perfect this recipe.  They didn’t complain so I guess it’s a good thing.  I am finally happy with this version and I hope you will like it too!

In this recipe I am serving grilled pork skewers with vermicelli.  You can, however, serve with rice, rice paper rolls, baguettes or by itself as appetizers.  You can marinate the meat ahead of time and freeze them directly on the skewers.  When you need them remove from freezer and put directly onto the grill.  It comes in handy for those surprised guests that you might have this Summer… LOL.
